Eggless No-Bake Blueberry Cheesecake | Without Gelatine & Oven

INGREDIENTS:

For Biscuit Base:

- Digestive Biscuits: 24 pieces, crushed
- Melted Butter: ½ cup

For Cheesecake Filling:

- Condensed Milk: 1 tin / 400g
- Fresh Cream: 200ml, chilled
- Paneer / Chenna: 200g, grated smooth
- Blueberry: 400g + extra for topping
- Agar: 2 tbsp + ½ cup water [75ml]
- Whipped cream: for decoration

METHOD - STEP BY STEP:

STEP 1: Biscuit Base

1. Grind digestive biscuits to fine powder in mixer.
2. Mix with melted butter till it looks like wet sand.
3. Press firmly in 8-inch springform pan base.
4. Refrigerate 15-20 mins to set.

STEP 2: Blueberry + Agar Mix

5. Soak 2 tbsp agar in ½ cup water 20 mins.
6. Heat till agar dissolves completely. No lumps.
7. Blend 200g blueberries to smooth puree. Divide in 2 parts.

STEP 3: Cheesecake Filling

8. Blend grated paneer + condensed milk till smooth. No lumps.
9. Add melted agar + 1 part blueberry puree. Mix.
10. Whip fresh cream till soft peaks. Fold gently into paneer mix.

STEP 4: Set Cheesecake

11. Pour filling on biscuit base. Smooth top with spatula.
12. Refrigerate 30-35 mins till first layer sets.
13. Pour remaining blueberry puree on top.
14. Chill 3-4 hours or overnight till fully set.

STEP 5: Serve

15. Demould carefully. Decorate with whipped cream + fresh blueberries.
16. Slice with hot knife for clean cuts. Serve chilled.

NO-FAIL TIPS:

1. Agar Agar vs Gelatine: Agar sets faster + works for vegetarians. Don’t replace 1:1 with gelatine.

2. Paneer trick: Blend paneer till absolutely smooth or cheesecake will be grainy. Use fresh paneer only.

3. Setting time: Don’t rush 3-4 hrs. Agar agar needs full chill time or slice won’t hold shape.
