Eggless Wholewheat Elaichi Biscuits
These Eggless Wheat Sooji Atta Cookies are healthy, crunchy biscuits made with wheat flour + semolina. No maida, no eggs! Made with Dalda ghee for that traditional bakery taste.
Super simple - just 5 mins prep. The Eno + baking soda gives perfect rise while sooji adds crispness. Kids love these with milk. One of the easiest cookie recipes I’ve ever tried!

Ingredients:- Whole wheat flour/Atta - 1/2 cup / 60g
- Semolina/Sooji/Rava - 1/2 cup / 80g
- Dalda ghee/Vanaspati - 1/2 cup / 100g, melted
- Icing sugar - 3/8 cup / 45g
- Baking soda - 1/4 tsp
- Eno fruit salt - 1/8 tsp, plain
- Chopped pistachios - 1 Tbsp
- Chopped almonds - 1 Tbsp
- Milk - 1-2 Tbsp, if needed
- Cardamon (Elaichi) - 1/4 tsp
- Mix dry: Mix wheat flour, sooji, icing sugar + baking soda + Elaichi (Cardmon) in a bowl.
- Add ghee: Add melted Dalda ghee. Mix with hands till crumbly.
- Add Eno: Last step - add Eno fruit salt + 1 tsp milk. Mix quickly. Dough will bubble slightly.
- Nuts: Add chopped pistachios + almonds. Mix gently.
- Shape: Make small balls and flatten. Place on baking tray.
- Bake: Preheat oven 160°C for 10 mins. Bake 15 mins till edges turn light brown.
- Cool: Cool completely. Cookies crisp up after cooling.
Important Tips
1. Eno trick: Add Eno at the end and bake immediately. Eno works fast - delay = flat cookies.
2. Dalda ghee: You can use butter or pure ghee too. Dalda gives old bakery taste.
3. No maida: 100% atta + sooji makes these fiber-rich and healthier.
4. Don’t overbake: 15 mins at 160°C only. They look soft but harden when cool.
