These Eggless Ghee Cookies are made with just 3 ingredients - maida, ghee + sugar! No eggs, no baking powder, no fancy tools needed.

3 Ingredients Only:- All-purpose flour/Maida - 1 cup / 125g
- Ghee, melted + slightly cooled - 1/2 cup / 100g
- Powdered sugar - 1/2 cup / 60g
- Mix: In a bowl, add maida, powdered sugar + melted ghee. Mix with hands till soft dough forms. No kneading needed.
- Shape: Pinch small portions. Roll into smooth balls. Gently flatten with palm. Make light design with fork if you want.
- Space: Place on baking tray with 1 inch gap. Cookies spread a little while baking.
- Bake: Preheat oven 160°C for 10 mins. Bake 15 mins till bottom turns light golden brown. Top will stay pale white - that’s normal.
- Cool: Cool 20 mins on tray. They harden as they cool. Very delicate when hot!
3-Ingredient Pro Tips
1. Ghee temp: Use melted but not hot ghee. Hot ghee = oily cookies. Room temp melted = perfect texture.
2. Sugar type: Must use powdered/icing sugar. Granulated sugar will not melt and cookies will be grainy.
3. Don’t overbake: Bake only till bottom is light brown. Top stays white. Overbaking makes them hard.
4. No baking powder needed: Ghee + sugar gives natural lift. Adding baking soda will ruin taste.
5. Storage: Stays crisp 20 days in airtight dabba. Ghee acts as natural preservative.
Beginner tip: If dough feels crumbly, add 1 tsp more ghee. If sticky, add 1 Tbsp maida. Dough should hold shape when rolled.
