INGREDIENTS:

For Cake Base:

- Chocolate sponge cake: 1 round, 6 inch / 50mm, eggless

For Soaking Syrup:

- Sugar: 2 tbsp
- Water: ¼ cup

For Filling:

- Vanilla ice cream: 2 cups, slightly softened
- Canned cherries: 4 tbsp, chopped
- Dark chocolate: 6 tbsp, grated

For Topping:

- Whipped cream: 1½ cups, beaten till stiff peaks
- Dark chocolate curls: ½ cup
- Canned cherries: 3, cut into halves

METHOD - STEP BY STEP:



STEP 1: Prepare Syrup

1. Heat ¼ cup water + 2 tbsp sugar till sugar dissolves. Cool completely.

STEP 2: Layer Cake

2. Slice chocolate sponge into 3 equal layers horizontally.
3. Place bottom layer on plate. Sprinkle ⅓ soaking syrup.
4. Spread 1 cup softened vanilla ice cream. Top with 2 tbsp chopped cherries + 3 tbsp grated chocolate.
5. Place middle sponge layer. Repeat syrup + remaining 1 cup ice cream + 2 tbsp cherries + 3 tbsp chocolate.
6. Place top sponge layer. Sprinkle remaining syrup.

STEP 3: Frost & Freeze

7. Cover top + sides with beaten whipped cream using spatula.
8. Garnish with chocolate curls + cherry halves on top.
9. Freeze 4-6 hours till ice cream is firm. Slice with hot knife, serve immediately.

NO-FAIL TIPS:

1. Ice cream temp: Soften ice cream 5 mins outside freezer only. Too melted = watery cake.

2. Work fast: Assemble in AC/cool kitchen. Ice cream melts fast = messy layers.

3. Sponge tip: Use day-old eggless chocolate sponge. Fresh sponge becomes soggy with syrup + ice cream.

IMPORTANT TIPS:

1. Soften ice cream 5 min only - don’t melt it
2. Freeze 4-6 hrs minimum or slices won’t hold
3. Cut with hot knife for clean slices
