Gluten Free Eggless Choco Millet / Ragi Cookies Recipe - No Maida

Ingredients - Gluten Free + No Leavening Agents
- 240 gms Ragi flour / Nachni flour / Finger millet flour
- 170 gms Rice flour
- 400 gms Unsalted butter, softened at room temp
- 170 gms Icing sugar / Powdered sugar
- 2 tbsp Cocoa powder, unsweetened
- 1 tsp Vanilla essence
Method / Instructions
- Preheat: Preheat oven to 160°C for 10 mins. Line baking tray with butter paper.
- Cream: In bowl, beat soft butter + icing sugar with electric beater till light + creamy, 2-3 mins.
- Add flavor: Add vanilla essence. Beat 30 secs more.
- Dry mix: Sieve ragi flour, rice flour, cocoa powder together. This removes lumps.
- Dough: Add dry mix to butter mix. Mix till soft dough forms. No baking powder/soda needed - butter gives texture.
- Chill: Refrigerate dough 20 mins. Makes shaping easier + cookies hold shape better.
- Shape: Divide into equal portions. Roll into balls, then gently pat to make 1/2-inch-thick cookies.
- Bake: Place on tray 1 inch apart. Bake at 160°C for 20 mins. Cookies will feel soft when hot.
- Cool: Cool completely on wire rack 30 mins. They firm up as they cool.
- Store: Store in airtight container up to 1 week. Stays soft + chocolatey.
Tips:
1. Sieve ragi + rice flour - they tend to have lumps.
2. No maida/baking soda = cookies won't spread much. Keep 1 inch gap.
3. 400g butter seems high but it's needed since no eggs/leavening. Gives soft texture.
4. For kids: reduce cocoa to 1.5 tbsp if too chocolatey.
5. Ragi is high in calcium + iron - great for growing kids.
