Eggless Rava Dates Cake | Sooji Cake Without Egg or Maida | Teatime Cake

Tin Size: 7-inch square or 8-inch round tin
Ingredients:
Rava/Sooji - 1 cup - 120 gms
Seedless Dates - 3/4 cup chopped or blended - 100 gms
Milk - 1 cup - 250 ml
Oil - 2 tbsp
Ghee - 2 tbsp
Granulated Sugar - 1/4 cup - 55 gms
Baking powder - 1 tsp
Cardamom powder - 1/2 tsp
Cashews - 3 to 4 broken into small pieces
Method:
1. Roast rava on medium flame for 3-4 mins till nice aroma comes. Keep aside.
2. Mix sugar, cardamom powder, cashews and baking powder well and add to rava.
3. Add milk, oil, ghee to rava mixture and mix well.
4. Finally add chopped/blended dates and mix till all ingredients are mixed well. Rest for 10 minutes.
5. Pre-heat oven to 180 deg C and bake for 30-35 minutes. Check after 25 mins with toothpick. If clean, cake is done.
6. Allow to cool completely before cutting. If cut hot, pieces won’t shape perfectly.
Notes:
Original recipe didn't call for roasting rava but roasting gives better aroma + texture.
If baked longer, cake becomes hard. 30-35 mins is perfect at 180C.
For uniform mixing, soak dates in 1/4 cup milk and blend to paste then add to rava.
If using banana, add 1/2 cup sugar instead of 1/4 cup. Dates give natural sweetness.
Don't expect cake to rise much. It will have just a thin layer but turns out light and fluffy.
