Easy Eggless Marble Cake Recipe

A soft vanilla and chocolate swirl cake made without eggs.

Ingredients:
Maida - 1 and 1/4 cup (170 gms)
Condensed milk / Milk powder - 3 tbsp
Baking powder - 2 tsp
Baking soda - 1/2 tsp
Butter - 1/2 cup
Powdered sugar - 3/4 cup (120 gms)
Milk - 1 cup
Vanilla essence - 1 tsp
Cocoa powder - 2 tbsp
Hot water - 2 tbsp

Method:

Prep

Preheat oven to 180°C. Grease and line a 7-inch cake tin with parchment paper.
Make the vanilla batter.

In a bowl, beat butter and powdered sugar until light and fluffy.

Add condensed milk and mix well.

Sift Maida, baking powder, and baking soda together.

Add the dry ingredients to the wet mix alternately with milk. Mix gently until smooth.

Add vanilla essence and combine.

Make the chocolate batter
Take 1/3 of the vanilla batter in another bowl.

Mix cocoa powder with hot water to make a smooth paste.

Fold this into the batter until well combined.

Marble effect

Pour alternating spoonfuls of vanilla and chocolate batter into the tin.

Use a skewer or knife to swirl gently. Don't over-swirl or the pattern will disappear.

Bake

Bake at 180°C for 35-40 minutes. Check with a toothpick – it should come out clean.

Cool in the tin for 10 minutes, then transfer to a wire rack.

Tips:

Use room temperature ingredients for a smooth batter.

Don't overmix after adding flour, or the cake will be dense.

If using milk powder, add 2-3 tbsp extra sugar to balance sweetness.
