Eggless Nankhatai recipe with ghee & besan

Soft, crumbly & melt-in-mouth Eggless Nankhatai made with ghee, maida & besan. This traditional Indian shortbread cookie needs no eggs but tastes like halwai style. Perfect for Diwali, teatime or kids tiffin. Stays fresh 2 weeks in airtight box. Prep Time: 15 mins | Bake Time: 25 mins Ingredients: Refined Flour / Maida 2 cups Gram Flour / Besan 3 tbsp Ghee 1 cup Powdered Sugar 1 cup Baking Powder 1 tsp Sooji / Semolina 1/2 tsp Elaichi / Cardamom, crushed 7 to 8 Method: Cream together ghee and sugar in food processor till light & fluffy. Sieve together refined flour, gram flour, and baking powder. Add Elaichi powder, sooji and mix. Add flour mixture to ghee-sugar mixture and cream again. Ingredients 1/2 lits         full cream milk 1 1/2 tbs      GMS powder 1/8 tsp         CMC powder 1 1/2 tbs      cornflour 6 tbsp          Sugar 1/4 cup        milkpowder 1/4 tsp         Pineapple  essence 1  medium     sliced Pineapple 3/4 cup        sugar Directions For base Bring Milk to room temp.Add sugar, GMS, cournflour, CMC to milk bring it slowly to boil. Be sure to use a sharp knife that won't catch or slip. Place shavings in measuring cup. Fill a saucepan one-quarter full (about 1 inch deep) with warm (not hot) water. If your pan has larger or smaller cups, adjust the baking time by about five minutes more for the larger muffins, five minutes less for the smaller ones. If muffins in the small cups get too brown, reduce the oven temperature to 375°F. Most muffin recipes offer dire warnings: Don't overmix! Fill muffin cups only a fraction of the way—from 1/2 to 2/3.
