These Eggless Masala Biscuits are savory, crispy tea-time cookies made with curry leaves, sesame seeds + coriander. No eggs, no sugar!
The aroma when these bake is absolutely heavenly - like fresh bakery masala biscuits. They’re lightly salty-sweet, super addictive, and perfect with chai or coffee. Made with yogurt instead of eggs for binding.

Ingredients
- All-purpose flour/Maida - 1 cup / 135g
- Butter, soft - 8 Tbsp / 100g
- Sesame seeds/Til - 1 Tbsp
- Curry leaves - 1 Tbsp, torn into small pieces, optional
- Coriander leaves/Dhania - 1 Tbsp, chopped finely
- Red chilli powder - 1/2 tsp
- Salt - 1 tsp, adjust to taste
- Sugar - 1/2 tsp, for balance
- Yogurt/Curd - 3 Tbsp, thick
Method / Instructions
- Dry mix: In a bowl, mix maida, salt, sugar + red chilli powder.
- Add flavors: Add sesame seeds, torn curry leaves + chopped coriander. Mix.
- Butter: Add soft butter. Rub with fingertips till crumbly texture.
- Dough: Add yogurt 1 Tbsp at a time. Mix to firm dough. Do not knead. If needed, add 1 tsp water.
- Roll & cut: Roll dough 1/4 inch thick. Cut with cookie cutter or knife into squares/diamonds.
- Bake: Preheat oven 160°C for 10 mins. Bake 15 mins till edges turn light golden. Center should be crisp.
- Cool: Cool completely on wire rack. They become extra crispy after cooling.

1. Curry leaves: Tear by hand, don’t chop. Tearing releases more aroma. Optional if kids don’t like.
2. Yogurt: Use thick hung curd. Watery curd will make dough sticky. Yogurt replaces eggs here.
3. Salt-sweet balance: That 1/2 tsp sugar is secret! It balances chilli + brings out flavors. Don’t skip.
4. Crispiness:** Bake till edges are golden. Underbaked = soft. Cool completely before storing or they’ll turn soggy.
