INGREDIENTS
- 100g Unsalted Butter, room temperature
- 30g Icing Sugar / Powdered Sugar
- 1 tbsp Cocoa Powder, unsweetened
- 30g Dark Chocolate, melted + cooled
- 135g All Purpose Flour / Maida
- 30g Almond Flour
Important Notes:
- Use 50-60% dark chocolate for rich taste
- Do not overbake - cookies set while cooling
- Almond flour makes them melt-in-mouth. Replace with 30g extra maida if needed
INSTRUCTIONS
- Preheat oven to 160°C. Line baking tray with parchment paper.
- Beat butter + icing sugar 2 mins till creamy. Add melted dark chocolate, mix well.
- Sift maida + cocoa powder + almond flour. Add to wet mix. Fold to form soft dough.
- Take 25-30g dough. Roll balls, place on tray 2 inch apart. Flatten slightly.
- Bake at 160°C for 20 mins. Centers will look soft. Cool 10 mins on tray.
- Store in airtight jar for 7 days. Stays fudgy for 3-4 days.
