Eggless Saffron Cookies Recipe | Kesar Biscuits
Hi friends! Today I'm sharing something aromatic and festive - Eggless Saffron Cookies aka Kesar Biscuits.
The fragrance of saffron + cardamom is so tempting that my son couldn't wait. He especially loved the butterfly shapes and asked me to bake only those for him!
These melt-in-mouth cookies need no eggs and use simple ingredients. Perfect for Diwali or tea time.

Ingredients
- Cardamom powder - 1/2 tsp
- Milk powder - 10 g
- Custard powder - 10 g
- All purpose flour/Maida - 200 g
- Milk - 20 ml + 1/2 cup for brushing
- Icing sugar - 80 g
- Butter - 120 g, softened
- Baking powder - 1/4 tsp
- Saffron strands/Kesar - 1/2 g, soaked in 1 tbsp warm milk
Method
- Cream butter: In a bowl, cream soft butter + icing sugar till fluffy. Add 20ml milk and mix.
- Dry mix: Sift flour, custard powder, milk powder, baking powder, cardamom powder together.
- Make dough: Add dry mix to butter mix. Add saffron milk. Make soft dough. Don't overmix.
- Shape: Roll dough 1/2 inch thick. Cut butterfly + flower shapes. Place on baking tray.
- Brush & Bake: Brush with milk. Bake at 160°C for 22 mins till bottom is golden.
- Cool & Store: Cool completely. Store in airtight box. Stays fresh 15 days.
Shilpa's Tips:
- Soak saffron in warm milk 10 mins before for stronger color + aroma
- Don't overbake - cookies will harden as they cool
- No oven? Use kadai + salt method on low flame 25-30 mins
