Eggless Karachi Fruit Cookies / Karachi Biscuits Recipe
Karachi Biscuits = Hyderabad's most famous tea-time treats! Soft, crumbly fruit cookies loaded with tutti frutti + cashews. No eggs, no condensed milk. Make them at home in 30 mins.

Ingredients
- 1 cup All-purpose flour / Maida
- 1/2 cup Butter, softened at room temp
- 1/2 cup Icing sugar / Powdered sugar
- 1/4 cup Tutti frutti
- 1/4 cup Chopped cashews
- 1/4 cup Custard powder - gives color + flavor
- 1/2 tsp baking powder
- 1/2 tsp Pineapple essence
- 1/8 tsp Salt
- 2-3 tbsp Milk, cold
Method / Instructions
- Dry mix: Sieve maida, custard powder, baking powder, salt together.
- Add fruits: Mix in chopped cashews + tutti frutti. Keep aside.
- Cream: In bowl, beat soft butter + icing sugar + pineapple essence + 1 tbsp milk till light + fluffy, 2 mins.
- Dough: Add dry mix 2-3 tbsp at a time. Mix with hands till soft dough forms. Add 1-2 tsp more milk only if needed. Don't over knead.
- Chill: If dough is sticky, divide in 2 parts. Roll into logs, wrap in cling wrap. Freeze 1 hour. This helps clean cutting.
- Preheat: Preheat oven to 160°C for 15 mins. Line tray with butter paper/foil.
- Cut: Unwrap logs. Cut 1/4-inch-thick slices with sharp knife. Place 1 inch apart on tray.
- Bake: Bake at 160°C for 18 mins. Cookies will feel soft when hot.
- Cool: Cool 10 mins on tray, then transfer to wire rack. They firm up as they cool.
- Store: Store airtight container up to 1 month. Perfect with tea.
Tips:
1. Freezing log 1 hr = no crumbling while cutting.
2. Custard powder gives that classic yellow color. No skip.
3. Don't overbake or cookies turn hard.
4. Use good quality tutti frutti - it stays soft.
