Eggless Atta Nan khatai


Most people make it with maida and besan but this one is with  wheat flour/ Atta.  This will be really a perfect snack for you kid’s snack box, its healthier than the store bought cookies and handmade with lots of love. And for this festival season, this is perfect for gifting, just bake it in batches, pack neatly in cute gift boxes and gift for your near and dears for this Diwali. They will be amazed for sure.   Nankhatai are basically indian shortbread cookies. The recipe shared in this post shows how to make nankhatai with whole wheat flour or atta.  Sharing these nankhatais made with whole wheat flour as i had got a few requests for the recipe. I have already posted the nankhatai recipe made with all purpose flour or maida. Wherever possible, i prefer to bake cookies and cakes using whole wheat flour.

 These nankhatais are not as crumbly as the ones made with all purpose flour but they taste good. Of course they taste like nankhatais made with whole wheat flour. 

You do get the nutty taste of wheat flour in these indian shortbread cookies. since they are made from atta, they are a better alternative than nankhatais made with all purpose flour. i have also added besan to give some crumbly texture.

Ingredients :


Wheat flour /Atta............. 130g
Besan /Gram flour............60g
Sooji/Semolina........ .......30g
Icing sugar...............  80g
Ghee......... 115g
Pinch of salt
1/2 tsp.......... Cardamom powder



Method:

  • In a large own seive Wheat flour, Besan,  Sooji,  icing sugar 
  • Now add cardamom powder and salt mix well. 
  • Add ghee and mix well and a soft dough. 
  • Now take little dough and  make a small round with a hand and place it on cookie bowl or greased tray. 
  • Arrange all the Cookies in a Line and  bake it in a preheated oven at 160°c for 15mins  and now reduce to 140°c for 10 mins. 
  • This is most important that Baking should be maintained what what I have mentioned coz these cookies are Atta cookies,  so follow the instructions given and Your Cookies will turn out well,  crispy,........ 
  • Cool it and store it In a airtight container.
