Coconut is one of my all time favorite things to bake with. Since you Bold Bakers love coconut just as much as I do, I know that you will enjoy a recipe that make this ingredient the star.
However, I have a big passion for coconut and my little ones love cookies. In fact, I have been baking quite a lot lately as my husband and son both are at home as lock down period and they always want cookies at snack time. So, when I saw these… I had to make them. And we all loved them. They are easy to make and taste delicious. Very coconut-y and not too sweet. Just right.
Ingredients:
Unsalted butter…150 g
Icing sugar or sugar powder……..100 g
Baking powder……1 tsp
Desiccated Coconut….55 g
All purpose flour…..200 g
Salt…..1/8 tsp
Vanilla essence….1 tsp
Method:
- In mixing bowl whip butter and sugar.
- Now sieve all purpose flour, baking powder, salt. Mix well
- Add desiccated coconut, vanilla essence to the dough.
- Make a dough, roll it with rolling pin.
- You can see the video.
- Dust little desiccated coconut and sugar on rolled dough and roll it once so that it will stick all to the dough.
- now cut the shape, you can cut any shape as you like.
Bake in preheated oven at 160 degree Celsius for 15 mins.
After it’s done, transfer the cookies on a wire rack, allow it get cool completely. After it gets cooled it becomes crispy and tasty.
Store in a airtight container .
