Eggless Chocolate Almond Cookies

Ingredients for Eggless Chocolate Almond Cookies

  • Maida / All Purpose Flour - 300 gms / 2.5 cups
  • Baking Powder - 1.5 tsp
  • Almonds - 150 gms, chopped + 20-25 whole for center
  • Butter - 150 gms / 3/4 cup, soft
  • Powdered Sugar - 200 gms / 1 cup
  • Milk - 1 tbsp
  • Dark Chocolate - 50 gms, melted for drizzle [optional]

Method - How to make Chocolate Almond Cookies without eggs

  1. Sieve dry ingredients: Mix maida + baking powder and sieve 2 times for soft cookies.
  2. Prep almonds: Keep 20-25 whole almonds aside. Grind rest coarsely. Soak whole almonds in warm water 30 mins, peel & cut into halves.
  3. Cream butter-sugar: Beat soft butter + powdered sugar till light & fluffy, 3-4 mins.
  4. Make dough: Add maida mix + chopped almonds + milk to butter. Knead soft dough. Don't over-knead.
  5. Shape cookies: Roll small balls. Place on greased tray 2 inches apart. Press halved almond in center of each cookie.
  6. Bake: Preheat oven 180°C. Bake 15 mins at 180°C till edges turn light brown. Center will be soft.
  7. Cool: Cool 5 mins on tray, then transfer to wire rack. Cookies harden as they cool.
  8. Drizzle: Melt chocolate + drizzle on cooled cookies for bakery look. Store in airtight box 2 weeks.
Pro Tips:
1. Don't skip soaking almonds - makes peeling easy + gives clean look
2. Bake only till edges are brown. Center should look slightly underbaked
3. For gluten-free version, replace maida with almond flour
