Eggless Crispy Cinnamon Atta Cookies

Made with 100% whole wheat flour/atta, these Crispy Cinnamon Cookies are spiced with cinnamon + nutmeg and lightly sweetened. Perfect for tea time!

They’re also great for kids’ tiffin since they have no maida and much less sugar than store-bought cookies. Crisp, healthy, and ready in 30 mins.

Ingredients

  • Whole wheat flour/Atta - 1 1/4 cups
  • Salted butter, room temp - 1/2 cup
  • Icing sugar - 1/4 cup + 1 Tbsp
  • Cinnamon powder - 1/2 to 1/4 tsp
  • Nutmeg powder - 1/4 tsp
  • Vanilla essence - 1 tsp
  • Milk - 1 1/2 Tbsp

Instructions

  1. Dry mix: Whisk atta, cinnamon powder + nutmeg powder. Set aside.
  2. Cream butter: Beat butter + icing sugar till creamy. Add vanilla essence.
  3. Dough: Add flour mix in 2 parts. Mix at low speed. Add milk till dough forms.
  4. Chill: Wrap in cling film. Refrigerate 15 mins.
  5. Shape: Preheat oven 160°C for 10 mins. Roll dough 1/4 inch thick. Cut shapes.
  6. Bake: Bake 160°C for 15 mins → Reduce to 140°C, bake 10 more mins till crisp.
  7. Cool: Cool completely. Store airtight 2 weeks.
For perfect texture & taste:

Butter temp is key

Butter should be soft, not melted. If melted → cookies spread too much. If cold → dough will crack. Press finger, it should leave an indent.

Don't skip chilling 15 mins

Atta has more gluten than maida. Chilling stops cookies from spreading + makes them crisp. No fridge? Keep dough in freezer 7 mins.2-temperature baking trick

You already wrote 160°C then 140°C - that's perfect! First 15 mins sets shape, last 10 mins at low temp makes them super crispy without burning. This is why store-bought cookies stay crisp 2 weeks.

Cinnamon amount - start less

You wrote 1/2 to 1/4 tsp. For kids, use 1/4 tsp only. Cinnamon gets stronger after baking. Too much = bitter taste. Add more next batch if family likes strong flavor.

Rolling thickness matters1/4 inch = crispy. 1/2 inch = soft inside. For tea-time "biscuit" feel, roll thin. If dough sticks, dust rolling pin + surface with atta, not maida.

Cooling = crisping

Cookies feel soft when hot. They crisp up only after cooling 20 mins. Don't store hot cookies - moisture makes them soggy.

Nutmeg tip for aroma

Use freshly grated nutmeg if possible. 1/4 tsp powder is enough. Nutmeg + cinnamon = that "Christmas cookie" smell that gets everyone to kitchen 😋
