Ingredients
- 75 gms Maida / All-purpose flour
- 75 gms Butter, softened at room temp
- 55 gms Icing sugar / Powdered sugar
- 25 gms Cornflour - makes cookies soft
- 1½ tbsp Cocoa powder, unsweetened
- 1 tsp Vanilla essence
- 2 tbsp Milk, as needed
Method / Instructions
- Preheat: Preheat oven to 160°C for 10 mins. Line tray with butter paper.
- Mix dry: Sieve maida, icing sugar, cornflour, cocoa powder together in a bowl.
- Mix wet: Add soft butter + vanilla essence to dry mix. Rub with fingers till crumbly.
- Dough: Add milk 1 tbsp at a time. Bring together into soft dough. Don't knead hard.
- Rest: Cover and rest dough for 30 mins. This makes cookies soft.
- Shape: Roll into small balls or roll dough + cut with cookie cutter. Place on tray with gap.
- Bake: Bake at 160°C for 20 mins. Cookies will feel soft - that's normal.
- Cool: Let cool 5 mins on tray, then transfer. They harden as they cool. Store airtight.
Notes: 1. Use good quality cocoa powder for dark color. 2. Don't overbake or cookies turn hard. 3. Cornflour is key for soft texture.
