Vanilla ice-cream interlaced with cherries and grated chocolate is sandwiched between the chocolate sponge to make an interesting variation of the traditional black forest cake.

Ingredients
1 (50 mm.(6") diameter) chocolate sponge cake
To Be Mixed Into A Soaking Syrup
2 tbsp sugar
1/4 cup water
For The Filling
2 cups vanilla ice-cream
4 tbsp chopped canned cherries
6 tbsp grated chocolate
For The Topping
1 1/2 cups beaten whipped cream
1/2 cup dark chocolate curls
3 canned cherries , cut into halves
Method
Slice the cake horizontally into 3 equal parts.
Place the bottom layer on a serving plate and sprinkle with 1/3 the soaking syrup.
Spread 1 cup ice-cream on the soaked layer of the sponge.
Top with 2 tbsp cherries and 3 tbsp chocolate and place another layer of sponge.
Sprinkle some more soaking syrup and then arrange the remaining 1 cup ice-cream over this layer.
Top with the remaining 2 tbsp cherries and 3 tbsp chocolate and then place the last layer of sponge.
Sprinkle the remaining soaking syrup and spread the whipped cream evenly on the top and the sides.
Garnish with the cherries and chocolate curls and freeze till the ice-cream is firm.Cut into wedges and serve immediately.
