These Eggless Chocolate Melting Cookies are classic melt-in-mouth biscuits made with cornflour + cocoa powder. No eggs, no fancy tools needed!

Ingredients
- Butter, room temp - 125g
- Icing sugar - 60g
- All-purpose flour/Maida - 100g
- Cornflour - 25g
- Cocoa powder, unsweetened - 15g
How to Make Chocolate Melting Cookies
- Cream: Beat butter + icing sugar on low till smooth + creamy. No lumps.
- Sift dry: Sift maida, cornflour + cocoa powder together. This makes cookies light.
- Mix dough: Add dry mix to butter. Mix till soft dough forms. Don't overmix.
- Shape: Make small balls. Press gently. Keep 2-inch gap - they spread!
- Bake: Preheat oven 150°C. Bake 15 mins only. Center will look soft - that's ok.
- Cool: Cool 20 mins on tray. They harden as they cool. Dust icing sugar.
Pro Tips:
1. Cornflour = melting texture. Don't reduce it.
2. Bake only 15 mins at 150°C. Overbaking = hard cookies.
3. Dust icing sugar only after cooling completely.
4. Store 5 days airtight. Add 1 grain rice for monsoon.
