Hi, i want to share something. I my husband visited to friends house, there my freind said her daughter is ellergyic to wheat, she cant have chapati, bread, cake, sooji. and she is just 8 year old. she loves cakes and cookies. so i thought of making Millet cookies for her with chocolate flavour. and it was success, just i have changed the recipe and made, you know what it has come awesome, crispy, very yummy, and she liked very much. and i am happy. coz in this there is no baking powder, no baking soda, and no maida (all purpose flour), very very healthy for small childrens and for big and old people too.
Ingredients ;
340 grams.........Millet powder (Ragi)
170 grams.............Rice flour
400 grams.......Butter
170 grams .............Icing suggar
1 tsp ......Vanilla essenc
2 tbsp........cocoa powder
Method:
- Preheat oven at 160°c.
- Take butter in a bowl. Add icing sugar and cream the mixture with electric blender.
- Add vanilla essence and blend again.
- Sift together Millet powder, rice flour, Cocoa powder in butter mixture.
- Mix well all together.
- Refrigerate the mixture for 20 minutes.
- Divide dough into equal portions shaped into balls . Pat them and shape into small cookies.
- Place cookies on a baking tray. Put tray in preheated oven and bake for 20 minutes.
- Remove from heat , cool and serve or store in airtight container for a week.
