Hi, this time again a challenge to me to make a Gluten Free Eggless Coconut Ragi Cookies. My 5year old son he don't like coconut, many times I tried him to feed in all forms of food, but he don't even touch, make many if's and but's, different types of facial expressions.
You know what happened when I prepared this Eggless Chocolate Ragi Cookies............. MAMMA MORE I WANT, IT'S YUMMY, VERY TASTY, CRISPY, I WANT MORE, I WANT MORE.
So dear friends this is good option for our kids to give Ragi(Millet) and coconut combination. What do you think? Health wise it's good, no Baking powder, no Baking soda, not all purpose flour.
Ingredients :
Preheat.....for 10min at 160 °c
Bake.......... For 20 mins at 160 °c
Desiccated coconut.................. 55 g
Milk/water..............2 tbsp
Butter.......... 100 g
Icing............100 g
Ragi Powder (Millet Powder)....... 200 g
Vanilla essence..............1 tsp
Milk/water..............2 tbsp
Butter.......... 100 g
Icing............100 g
Ragi Powder (Millet Powder)....... 200 g
Vanilla essence..............1 tsp
Method:
- Take a bowl adds butter and cream it, add Icing sugar, vanilla essence, mix well. Make something soft creamy.
- Add Ragi powder (Millet powder) mix this and add desiccated coconut Powder, and milk mix it like a dough put it in the refrigerator for 15 minutes.
- After 20 mins, with the help of rolling pin roll the dough sprinkle some desiccate coconut and sugar mixture, again roll it once,and cut into even sizes.
- Arrange the cookies in the greased tray. Bake it in the preheated oven for 20 mins at 160 degree Celsius.
- After baked Cookies, cool it in the wire rack till completely cooled down. You can store it in airtight container for a week.
- Enjoy delicious mouth watering Gluten Free Eggless Coconut Ragi Cookies, crispy yummy.
Note:
If you are allergy with milk, then you can use water instead of milk.
